Jamaican jerk spice is a pungent, hot mixture of spices used to flavor meats before grilling or roasting in Jamaican cuisine.

2 tablespoons cayenne pepper
1 teaspoon cinnamon, ground
1 teaspoon nutmeg, ground
1 teaspoon allspice, ground
2 teaspoons dried chives
2 teaspoons dried thyme
1 tablespoon sugar
1 tablespoon dried minced onion
1 tablespoon salt

4 tablespoon ground allspice
1 tablespoon ground dried thyme
1 tablespoon paprika
1 teaspoon ground red pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
